American | Birthday Pancakes

These were yummy and fluffy. You can top them with either frosting or maple syrup.
Yield: a bunch
Ingredients
1 1/2 cups buttermilk
2 tablespoons lemon juice
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
4 tablespoons sugar
2 teaspoons double acting baking powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons rainbow sprinkles
Method
Whisk wet ingredients - buttermilk, lemon juice, eggs, vanilla in a large bowl.
Into a second bowl, sift dry ingredients - flour, sugar, baking powder, baking soda, and salt.
Whisk the dry ingredients into the wet ingredients and mix until there are no lumps.
The batter will be bubbly in a minute or two. Stir in the rainbow sprinkles.
Pour the batter by 1/4 cup measures onto an oiled griddle pre-heated to 362.5°F. Cook until bubbly then flip cooking until the second is perfectly golden brown.
