Italian | Cavatelli with Broccolivegan

We love this! Simple and good.

Yield: 2 servings, with leftovers

cavatelli with broccoli


1/2 pound cavatelli pasta

1 pound broccoli florets

1/4 cup olive oil

4 cloves garlic, minced

kosher salt, to taste

freshly ground black pepper, to taste

crushed red pepper, to taste



Cook cavatelli according to package directions. When cavatelli is done, remove using a spider and put in a bowl. Add broccoli to the same boiling water, cook until bright green and fork-tender, about 5 minutes. Remove broccoli to bowl. Reserve 1/2 cup of the pasta water, dump remaining water. Return pasta and broccoli to the pot.

Meanwhile, in a small skillet, heat oil over medium-high heat and add garlic. Cook for 30 seconds or until fragrant. Remove from heat and add to the pot of pasta. Add reserved pasta water and salt to the pasta. Toss to coat. Season with black pepper and crushed red pepper.
