American | Chicken Salad

I've been making a batch of this chicken salad at the beginning of each week and having it for lunch. My mom asked for the recipe, so here it is. I included optional ingredients that I have used so far, but there are lots of variations that you can make!
Yield: several servings
Ingredients
2 roasted chicken breasts halves, medium dice
1/3 cup Vegenaise or mayonnaise
1/3 cup Greek yogurt
1 tablespoon Dijon mustard
1/2 cup walnuts, rough chop
1 stalk of celery, small dice (optional)
chives, to taste (optional)
1/4 cup golden raisins (optional)
3 tablespoons dried cranberries (optional)
Maldon sea salt, to taste
freshly ground pepper, to taste
Method
Mix all ingredients together in a bowl. Season to taste with salt and pepper. Serve in a sandwich or over dressed lettuce.
