Sweets | Cupcake in a Mug
Posted on March 9, 2012
I was reading Lucky Peach before my yoga class on Wednesday and saw this recipe. Sounded yummy. And game changing, I could have a chocolate cupcake in less than 5 minutes. During my yoga class, while I should have been omming, I had visions of cupcakes dancing through my head.
Yield: 1 serving or 2 servings if you are nice and willing to share
Ingredients
1 egg
3 tablespoons milk
3 tablespoons neutral oil
3 tablespoons flour
4 tablespoons sugar
2 tablespoons unsweetened cocoa powder
3 tablespoons semi-sweet chocolate chips
small splash vanilla extract
pinch of salt
1 small or medium coffee mug (Microsafe)
Method
Add wet ingredients (including the egg) to a small or medium coffee mug and mix well. Add the dry ingredients and mix thoroughly. Add the chocolate chips and vanilla extract, and mix again. Put your mug into a 1000-watt microwave for 2 minutes. The cake will rise over the top of the mug, but don't be alarmed. Allow to cool and tip out onto a plate if desired. EAT!
