American | Curried Chicken Salad

A quick and tasty chicken salad to make from rotisserie chicken. I adapted the recipe from a recipe with the same name in the book Fit For Life.
Yield: 2 servings
Ingredients
2 cups cubed, cooked chicken breasts (about 2 1/2 breasts)
1/2 cup shredded carrot
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 to 2 tablespoons mayonnaise
1/2 teaspoon Madras curry powder
1/2 teaspoon dried basil
chives, to taste
salt, to taste
pepper, to taste
mixed lettuce
Method
Mix all ingredients and serve over mixed lettuce.
