Veggies | Daikon Radish Saladvegan

Ingredients

2 cups daikon radish, julienned

1 teaspoon kosher sea salt

1 tablespoon rice vinegar

2 teaspoons granulated sugar

1 teaspoon sake

 

Method

Place the daikon is a colander over a bowl or sink and sprinkle with salt. Mix well. Let sit for 30 minutes. Squeeze out excess water and rinse well with cold water. Drain.

In a small saucepan, combine the rice vinegar, sugar and sake. Cook over medium heat, stirring constantly, until sugar dissolves.

Transfer the daikon to a bowl and pour the vinegar mixture over. Stir to combine. Chill for at least 20 minutes before serving.
