American | Grilled Prawns with Apple Onion Chutney

You can serve this chutney with roasted meats, poultry, or game.
Yield: 8 servings
1 tablespoon olive oil
2 medium onions, coarsely chopped
3 tart apples, peeled, cored, and coarsely chopped
1/4 cup honey
1/4 cup raisins
3/4 cup water
1/2 cup chardonnay vinegar
1 tablespoon fresh ginger, grated
zest of one orange
salt, to taste
freshly ground black pepper, to taste
24 large prawns, cleaned, peeled, and deveined
In a large sauce pan, heat oil and sauté onions until browned, about 7 minutes. Add apples, honey, raisins, water, vinegar, ginger, zest and simmer over medium heat for 30 minutes. Season to taste with salt and pepper.
Season prawns with salt and pepper and grill on a preheated grill for 2 minutes each side. Serve with Apple Onion Chutney.
