Spanish | Ham and Cheese Bocadillos

Tasty ham and cheese sandwiches. What makes this a notch above a regular ham and cheese sandwich, is the serrano ham or prosciutto and the artisanal cheese.
Yield: 4 sandwiches
Ingredients
8 slices sourdough French bread
8 thin slices serrano ham or prosciutto
8 slices ripe tomato
4 slices sheep's milk cheese (P'tit Basque, Manchego, or Ossau-Iraty)
Dijon mustard
extra-virgin olive oil
Method
Lay 4 bread slices on a work surface. Top each slice with a slice of ham, 2 tomato slices, a slice of cheese, and another slice of ham. Spread the remaining bread slices on one side with mustard, and place, mustard side down, on top.
Brush the outsides of the bread with olive oil. Preheat griddle, ridged grill pan, or panini press over medium-high heat. Grill sandwiches for about 2 minutes on each side, or until golden brown and cheese is melted.
