Sweets | Lemon-Curd Blackberry Swirl Ice Cream

When your neighbor gives you lemons, make lemon curd ice cream! My neighbor has the best Meyer lemons, she gave me a few so I decided to make this ice cream. The blackberry swirl sweetens up the tart lemon. I used more blackberries than listed in the recipe. I used a whole bag of frozen blackberries. Also it didn't take the full 8 minutes to get to a syrup. If you do use more blackberries, increase the sugar by a bit as well. It was yummy.

Yield: 2 pints / 1 quart

1 1/4 cups (about 6 ounces) frozen blackberries (I used more)

1 1/2 cups sugar (divided 1/4 cup, 1/2 cup, 3/4 cup)

1 tablespoon plus 2/3 cup fresh lemon juice (divided 1 tablespoon and 2/3 cup)

1 tablespoon light corn syrup

1 3/4 cups heavy cream

1 1/4 cups whole milk

1 tablespoon vanilla bean paste

8 large egg yolks

2 1/2 teaspoons grated lemon peel



Make the blackberry swirl: Boil berries, 1/4 cup sugar, 1 tablespoon lemon juice, and corn syrup in a small saucepan over medium-high heat until thick, stirring often, about 8 minutes. (This took less time for me.) Strain berry mixture into small bowl, pressing on solids. Chill syrup.

Make the ice cream base: Combine cream, milk, and 1/2 cup sugar in heavy large saucepan. Add vanilla bean paste. Bring mixture to simmer. Remove from heat.

Whisk egg yolks and remaining 3/4 cup sugar in large bowl to blend. Whisk in remaining 2/3 cup lemon juice and lemon peel. Gradually whisk hot cream mixture into yolk mixture. Return mixture to saucepan. Stir over medium heat until custard thickens enough to coat back of spoon (do not boil), about 12 minutes. Strain custard into clean large bowl. Set bowl of custard over ice bath, stir until cooled. Refrigerate until cold.

Process custard in ice cream maker according to manufacturer's instructions.

When moving ice cream to container, layer in blackberry sauce. This will create a swirl when serving.
