Peruvian | Lomo Saltado

My brother's recipe. We love it!
Yield: 2 servings
Ingredients
1 cup sushi rice
1/2 bag frozen shoestring french fries
3/4 pound beef filet, pat dry, cut into 1/2" wide strips against the grain
2 teaspoons cumin, ground
kosher salt
freshly ground black pepper
1/4 cup soy sauce plus 2 teaspoons
2 tablespoons red wine vinegar
3 tablespoons aji amarillo paste
high heat oil, like grapeseed or avocado
1 small to medium red onion, cut into wedges
2 garlic cloves, thinly sliced
4 roma tomatoes, cored, seeds removed, cut into 8 wedges
cilantro, for serving
Method
Start cooking rice according to package instructions.
Start cooking french fries according to package instructions.
Combine beef with the two teaspoons of ground cumin, salt, pepper, and two teaspoons of soy sauce. Set aside.
Combine 1/4 cup soy sauce, red wine vinegar, and aji amarillo paste
Heat wok until a drop of water sizzles.
Add oil.
Cook beef and remove from wok. Set aside on a plate.
Add more oil to wok, if needed.
Cook onions until soft.
Add garlic and cook for about 30 seconds.
Add tomatoes and cook for 1 to 2 minutes.
Add beef and sauce and cook for about 1 to 2 minutes.
Add cooked french fries and heat through, about 1 minute.
Serve with rice!
