Sweets | Mojito Sorbetvegan

After making orange and lemon sorbets, I thought I would do a lime. Which then got me thinking about mojitos, naturally.

Yield: about a quart

mojito sorbet

Ingredients

1 cup water

1 cup sugar

1/2 cup mint leaves, not packed (smell your mint, if super strong cut back, if weak add a little more)

1 cup freshly squeezed lime juice

1 1/2 ounces freshly squeezed lemon juice

1 1/2 cups club soda

1 1/2 ounces rum (I use Flor de Caña Extra Dry)

 

Method

In a saucepan over medium heat, heat the sugar, water, and mint leaves and stir until sugar is dissolved. Bring mixture to a boil, then reduce heat to a simmer for about 3 minutes. Remove from heat and let cool completely. Strain out mint leaves.

Combine the lime juice, lemon juice, and club soda. Then add the minted sugar mixture to the lime mixture. I do it this way so that you can add more or less according to your taste. Once you like the sweetness, add the rum.

Chill thoroughly, then freeze in your ice cream maker according to the manufacture's instructions.
