Cuban | Mojo Chicken

The key to making mojo is in the proportions. Scale this recipe up to meet your needs. The only hard to find ingredient is the Sour Orange Juice. Try a Cuban market or online at Cuban Food Market and Amazon. I've also seen it at Portuguese markets. If you can't find the Sour Orange Juice, substitute 2 parts orange juice, 1 part lemon juice, and 1 part lime juice.

Yield: 2 to 4 servings

Ingredients

8 to 10 cloves garlic

1 teaspoon salt

1/2 teaspoon black peppercorns (whole)

1 teaspoon fresh oregano

3/4 cup sour orange juice

2 to 4 chicken breasts

 

Method

Use a mortar and pestle. Add the garlic, salt, peppercorns, and oregano. Mash them all together into a paste. Put in the container that you are going to marinate the chicken in. Add sour orange juice and chicken. Marinate for several hours. Then grill the chicken.
