Italian | Parmesan Crisps

Serve as an appetizer or on a salad.
Yield: as many as you want
young or inexpensive Parmesan cheese
Preheat oven to 375°F.
Grate the Parmesan cheese and sprinkle evenly onto a non stick mat or parchment. Form into desired shape and size.
Place in preheated oven and allow to melt and turn slightly golden.
Remove from the oven and allow to cool slightly.
At this point you can either use a palate knife to ease the Parmesan crisp from the mat and drape over or into a mold, or you can let it cool flat.
