Vegan | Piquillo Pepper Cannellini Dip

Similar to the Piquillo Pepper Hummus recipe. Cannellini beans have a smoother texture.
Yield: 2 to 4 servings
Ingredients
1 15-oz can cannellini beans, rinsed
2 roasted piquillo peppers (from a jar)
1 clove garlic, minced
1 tablespoon Sherry vinegar
1/2 teaspoon sweet, smoked Spanish paprika
4 tablespoon olive oil
kosher salt, to taste
Method
In a mini-chop food processor, blend cannellini beans, piquillo peppers, garlic, Sherry vinegar, and paprika. Add 1 tablespoon of olive oil at a time (total of 4) and blend until smooth. Salt to taste.
