Sweets | Plum Galette

The amount of sugar depends on the tartness of the plums. Taste your plums and adjust accordingly.
Yield: about 6 servings
Ingredients
Crust:
Filling:
6 to 8 plums, pitted and sliced
2 tablespoons or more of sugar
dash of cinnamon
1 teaspoon fresh lemon juice
zest from 1/2 an orange
1 tablespoon of flour
Method
Prepare the crust.
Toss plum slices with sugar, cinnamon, lemon juice, orange zest, and flour.
Preheat the oven to 400°F.
Remove the pie dough from the refrigerator and let stand for 5 minutes before rolling out. Line a baking sheet with a silicone mat. Lightly flour a work surface. Roll out pie dough to about about a 12" circle about 1/8 inch thick.
Arrange plum slices, leaving 1 to 1 1/2 inches margin. Fold up the edges of the dough, trim edges if necessary.
Bake for 40 minutes, until the crust is lightly brown and the filling is bubbly. Cool on a rack for an hour.
