Portuguese | Portuguese Grilled Chicken (Frango Grelhado)

Juicy and delicious. The combination of seasonings is typical Portuguese - garlic, bay leaf, olive oil, paprika, and hot red peppers.

Yield: 6 servings

Portuguese grilled chicken

Ingredients

2 large garlic cloves, peeled and sliced

1 large bay leaf, crumbled fine

2 tablespoons paprika (preferably Spanish sweet)

1 tablespoon kosher sea salt

1/4 teaspoon crushed red pepper flakes

1/4 teaspoon freshly ground pepper

2 tablespoons olive oil

6 pieces of chicken

 

Method

Using a mortar and pestle, mash the garlic, bay leaf, paprika, salt, chilli peppers, pepper, and olive oil to paste. Rub the chicken well on all sides, then cover and refrigerate several hours. Note: Wash your hands after handling the paste because the chilli peppers can irritate your skin.

Remove the chicken from the refrigerator and let it stand at room temperature for 30 minutes. Grill chicken on preheated grill.
