Indian | Samosas (Beef, Onion, & Sweet Potato)

We've been cooking a lot out of Jamie Oliver's cookbook Everyday Super Food. Really good, healthy recipes. Here is his take on Samosas. You can serve them with the yogurt and chili sauce as shown here or with Mint Chutney. The recipe makes several so I freeze the extra. For the hot chili sauce, I strained some Sriracha.

Yield: several samosas

Samosas (Beef, Onion, & Sweet Potato)

Ingredients

1/3 cup brown rice, cook and cool

olive oil

3 1/2 ounces lean ground beef

medium curry powder

1 yellow onion, finely chopped

2 cloves of garlic, finely chopped

1 sweet potato (8 ounces), diced

1 fresh red chile, finely chopped (optional)

8 sprigs of fresh cilantro, finely chopped

4 large sheets of phyllo pastry

1 level tablespoon black onion seeds (optional)

1/2 an English cucumber, scoop out and discard watery core, dice

1/2 a lemon

4 tablespoons plain yogurt

hot chili sauce

salt, to taste

pepper, to taste

 

Method

Put 1 tablespoon of oil, the beef, and 1 tablespoon of curry powder into a skillet over medium heat. Stir regularly. Add onion, garlic, sweet potato, chile, and cilantro to the pan and cook for about 15 minutes, stirring often. Pour in 1 1/2 cups of water, then simmer for 20 minutes. Semi-crush the sweet potatoes with a wooden spoon. Season the mixture with salt and pepper. Let cool. Stir in the rice.

Preheat oven to 400°F. Cut each phyllo sheet lengthwise into 4 inch strips. Make one samosa at a time by lightly brushing each with a little water and evenly sprinkling black onion seeds over the strip. Spoon some filling at the base of the strip. Fold and turn up the pastry to create a triangle shape, use a little water to seal and stick down any overhang at the end.

Place on a baking sheet and cook for 20 minutes, or until crisp and golden brown, turning halfway.

Dress the cucumber with lemon juice.

Serve the samosas with yogurt, chili sauce, and cucumber. Garnish with cilantro leaves.
