Vegan | Swiss Chard with Cannellini Beans

Quick and tasty.
Yield: 4 servings
Ingredients
olive oil
1 medium onion, chopped
3 to 4 cloves garlic, minced
1 bunch Swiss chard, chopped
small pinch of crushed red pepper flakes
15 ounce can of cannellini beans, drained and rinsed
a few splashes of veggie stock
a few drizzles of olive oil
kosher salt, to taste
freshly ground pepper, to taste
Method
Saute onion in olive oil until softened. Add garlic and saute 30 seconds more.
Season with salt and pepper. Add crushed red pepper flakes.
Add chopped chard and cook until wilted.
Stir in beans and heat through.
Add some veggie stock to moisten, let cook off a bit.
Season to taste with salt and pepper. Serve drizzled with olive oil.
