Thai | Thai Cucumber Relish

This is a quick pickle. To be served as a accompaniment with a Thai meal. Best served the day it's made.

Yield: about 1 cup

Thai Cucumber Relish


1/2 cup rice vinegar

1/2 cup sugar

1 tablespoon fish sauce

1 cup thinly sliced English cucumber

1 large shallot, peeled and thinly sliced

1 Thai chile, very thinly sliced, or to taste

1 tablespoon chopped fresh cilantro leaves



Place rice vinegar and sugar in a small saucepan and heat over medium-low heat, stirring just until the sugar dissolves. Add fish sauce and stir well. Remove saucepan from heat and set aside to cool slightly.

Add cucumber, shallots, chile and cilantro to the vinegar mixture. Toss well to combine and let sit for at least 30 minutes.
