Yemeni | Zhougvegan

Zhoug is a cilantro-based hot sauce. We don't like the heat, so we leave the jalapeños out.

Yield: about 1 cup


4 cloves of garlic

1 cup flat-leaf parsley leaves

1 cup cilantro leaves

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon kosher salt

1/4 cup olive oil



In a food-processor (I use a Mini-Prep), combine all ingredients and blend until it's the consistency of pesto. Add more olive oil, if needed.
